In this case the problem was caused by a misconfigured (Sender Policy Framework) record in Microsoft Hosted Exchange.

Up until 2021 and mail servers were not strictly enforcing the SPF policy on their incoming mail servers. Once they tightened the policy incoming from poorly configured accounts, started being rejected. This could be the reason why you are only just experiencing such issues.
